As goat milk season winds down and the coldest months of the year arrive, our creamery shifts its focus to rich, high-butterfat cow’s milk and the comforting foods we all crave in winter. It was during this seasonal rhythm that Cottonbell was born.
This all-cow’s-milk sister to our seasonal Cottonseed is wrapped in a snowy bloomy rind and ripens into something wonderfully lush. Cottonbell offers warming notes of cultured butter, oyster-shell salinity, and gentle mushroom woodiness, with a soft, creamy interior that grows more luxurious as it matures.
While Cottonseed appears only during goat milk season, Cottonbell remains a year-round favorite, allowing us to continue crafting a bloomy cheese that celebrates beautiful milk and patient aging.
In 2026, Cottonbell was honored with a Bronze Medal in the Brie category at the World Championship Cheese Contest®, placing our little creamery among some of the finest cheesemakers in the world.
